Ingredients:
- 1 large pineapple
- 4 eggs yolks
- 3 whole eggs
- 1/2 cup sugar, divide
- 1 vanilla bean, scraped
- 1/2 cup pineapple juice
- 2 tablespoons coconut milk
- For garnish: whipped cream, strawberries (optional)

Instructions:
- Preheat oven to 350°F/180°C/Gas Mark 4, and use a parchment paper to line a baking sheet.
- Cut pineapple into 4 circles around 2 – 2 1/2-in. thick. Next, cut a circle in the center of every slice (leave around a 1/2-in. ring).
- Scoop out the middle of the pineapple using a melon baller; go around halfway through, ensuring not to pierce the bottom of your pineapple. Arrange on the prepared baking sheet.
- Then, in a saucepan over medium-low heat, combine together yolks, eggs, 1/4 cup sugar, vanilla seeds, and pineapple juice. Continuously whisk until mixture starts to thicken, around 5 minutes. Remove and add in coconut milk.
- Spread custard mixture into each pineapple (fill to the top). Place in the oven and bake for 5 minutes.
- Then, remove and let cool. Top every pineapple dish with remaining sugar and torch until golden brown.
- Decorate with whipped cream and strawberries, if desired.
